Avocado Wraps

Description

This is an ideal pre dinner entree or substitiute crepes for tortilla wraps for packed lunches. Use purchased crepes or make your own: 1/2 cup all-purpose flour; 1 egg; 1/4 cup low-fat milk; 1/4 cup water; pinch salt; 1 tablespoons melted butter ; Whisk the flour and the eggs together in a large mixing bowl. Slowly stir in the milk and the water. Add the salt and butter, and beat the mixture until smooth. Use about a 1/4 cup of batter for each crepe.

Ingredients

1 ˝ Cups diced Avocados; ˝ Cup diced cherry tomatoes (or grapes); 1 Tbsp diced red onion; ˝ Cup ranch salad dressing (of your choice); 4 Crępes (see recipe); 1 Cup shredded smoked cooked chicken or cooked chilled crab meat (optional) ; salt and pepper to taste; ˝ Cup prepared salsa (for garnish).

Method

Gently toss Avocado, tomatoes and onion in a medium bowl. Pour salad dressing over vegetables and toss gently to combine. Toss in chicken or crab, if desired. To assemble, place approximately 2 tablespoons of the avocado mixture onto the centre of a crępe. Fold crępe in half, bottom to top, with fold at bottom and slightly uneven edge at top. Roll left to right, starting from bottom left corner, to create a cone shape with opening at top. Repeat with each crępe. Place wraps on a serving plate.
