Chicken & Avocado Sandwiches w Sundried Tomato Spread, Caramelised Onions, & Spinach

Ingredients

CHICKEN: Thinly sliced chicken tenderloin, salt (as needed), pepper (as needed), flour (as needed), 2 Tbsp avocado oil. CARAMELISED ONION: 1 Tbsp avocado oil, 1/2 onion thinly sliced. SUNDRIED TOMATO SPREAD: 1/2 cup sundried tomatoes, 1 clove garlic (smashed), 3-4 Tbsp avocado oil, salt (as needed), pepper (as needed). Avocado (sliced), spinach leaves, crusty bread (sliced).

Method

1. Season the chicken with salt and pepper. Dredge it through the flour. Heat the avocado oil in a large saute pan over medium heat. Cook the chicken until it is golden brown on each side. Set aside. 2. Heat the avocado oil in a medium saute pan over medium heat. Add the onions and saute until caramelised and dark brown. 3. Combine the sundried tomatoes, garlic, avocado oil, salt, and pepper in a blender or food processor. 4. Spread the sundried tomato mixture across the bread. Add the chicken, onions, avocado slices, and spinach. Serve warm.
