- Start with a ripe avocado and cut it lengthwise around the seed. Rotate the halves to separate.
- Remove the large seed by sliding the tip of a spoon gently underneath and lifting it out.
- Peel the fruit by using a knife, or your fingers, starting at the small end. Alternatively, scoop out the avocado flesh with a spoon. TIP: Sprinkling all cut surfaces of the fruit with lemon or lime juice or white vinegar will prevent discolouration, but don't worry about this too much if you're going to eat your avocado straight away.
