Chilled Cucumber Avocado Soup
This soup is inspired by Nana’s chilled cucumber soup. And although the original recipe doesn’t contain avocado my Nana being quite radical for her time (back in the 80’s) would sometimes add a scoop of avocado for an extra creamy texture. It was not unusual for this chilled soup to be served on a hot summer day, even featuring as a refreshing starter to Christmas lunch on a number of occasions. For a dairy-free soup omit the yogurt and add extra lemon to taste. A balance of salty, sour and pungent is the key to this flavoursome soup, which I hope will become a family favourite using creamy NZ avocados.
Chef Dom's Christmassy Avocado & Chocolate-Mint Mousse
This is a rich desert that tastes more along the lines of dark chocolate than milk chocolate. Dom loves it but some children may need extra sweetener. Definitely a “special occasional” as Dom says because very rich.
