10 mins 4 Easy Avocado, Watermelon, Pomegranate and Feta Salad This makes a light, refreshing starter or special side salad. Serve on individual plates, or as one big salad for the table. 50 mins 4 Moderate Smoky Avocado, Corn, Roast Red Pepper and Potato Salad This tasty summer potato salad is perfect to take along to summer a BBQ. 20 mins 2 Moderate Sachie Nomura's Thai Beef Salad with Avocado My Thai Beef Salad is one of my favourite salads to have for lunch or dinner and adding avocado will give a beautiful creaminess to the salad. You don't have to marinate the beef over night but the longer you marinate, the better the flavour is! If you can't find green papaya, you can substitute with green beans or mango. 20 mins 2 Moderate Avocado and Salmon Toasted Sandwich The combination of avocado and smoked salmon is unbeatable. Adding a slice of red onion and cream cheese sauce gives an extra lift to the sandwich too!
