Salsa Loaded Kumara

A healthy alternative to the baked potato for a delicious guilt free lunch.

Time: 55 mins Serves: 4 Difficulty: Moderate
Ingredients:

6 orange kumara
Olive Oil
Cracked pepper

Salsa Ingredients:
1 handful of cherry tomatoes
1/2 red onion, finely chopped
1 avocado, diced
1 yellow capsicum, deseeded, and diced
1 clove garlic, crushed
2 fresh red chilli’s, finely chopped
8 or 10 coriander leaves, chopped
Natural Greek Yoghurt
Cooking spray (olive oil or similar)

Method:

Pre-heat oven to 200°C
Place kumara in a large roasting pan, spray with oil and a little cracked pepper
Cook kumara for about 30 to 40 minutes or until tender. Leave to cool a little
Combine all salsa ingredients in a medium bowl. Season with pepper and mix well
Cut kumara down the centre lengthwise and load up with salsa
Serve with a dollop of natural Greek yoghurt
