Guacamole by Paella Pan

Ingredients

  • 4 NZ Avocados, scooped & diced
  • 1 red onion, finely chopped
  • 2/3 tomatoes without seeds, diced
  • 2 tablespoons of olive oil virgin extra
  • Juice of 4/5 lime and juice of half Orange
  • Salt & Pepper, to taste
  • Optional: chopped coriander and a pinch of chili flakes

Method

  1. Mash the avocados in a bowl until smooth (or leave a few chunks for texture).
  2. Mix in the onion, tomatoes.
  3. Add lime and orange juice, salt, and pepper. Adjust seasoning to taste.
  4. Optional: add cilantro and chili flakes for extra flavor.
  5. Serve immediately with tortilla chips or as a topping for your favorite dishes.

 

This guac was a star at the 2026 Auckland Latin Fiesta Guacamole competition.
