- 1 Cup Olivado extra virgin avocado oil
- 1/4 cup of chickpea water (aquafaba) (brine from tinned chickpeas)
- 1 tsp DYC white wine vinegar
- 1 tsp mustard
- 1 NZ Avocado
- Salt and pepper

- Place all ingredients in a small food processor except for avocado and seasoning. Blend until creamy.
- Add avocado flesh and process until smooth. Season to taste.
- Serve as a dip or enjoy as a dressing.
