Guasacaca Sauce

Ingredients

  • 1 avocado
  • 1 handful fresh coriander
  • 1 handful fresh parsley
  • ½ green capsicum roughly chopped
  • 1 spring onion, chopped
  • 1 clove garlic, crushed
  • 2 tbsp lime juice
  • 2 tbsp white vinegar
  • 2 tbsp olive oil
  • 2 tbsp water (adjust for consistency)

Method

Place all ingredients aside from the water into a blender or food processor, add a good sprinkle of salt and pepper.
Blitz until smooth,  adding a little water as needed for a pourable consistency.  

Adjust seasonings to taste. 

Serve immediately alongside grilled/BBQ meat or corn chips for dipping.
