Avocado Pesto Pasta

Ingredients
- 400g penne pasta
- 1 avocado
- 1 handful fresh basil leaves
- 2 cloves garlic, crushed
- ½ cup grated Parmesan cheese (plus a little extra for garnish)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp water (as needed)
- 1 handful fresh basil leaves
Method
Cook the pasta in a pot of salted boiling water until al dente, then drain, reserving a little pasta water.
Place the avocado, basil, garlic, Parmesan, olive oil, lemon juice and a good sprinkle of salt and pepper in a blender or food processor. Blitz until smooth, adding a little water if needed for consistency.
Toss the pasta with the avocado pesto, adding reserved pasta water to loosen if necessary.
Serve immediately sprinkled with extra Parmesan and fresh basil.
