Avocado & Soba Noodle Salad

Ingredients

  • 400g soba noodles
  • 1 ½ cups shelled edamame beans
  • 1 avocado, diced
  • 1 carrot, grated
  • 1 red capsicum, diced
  • 3 spring onions, sliced
  • 1 tbsp black sesame seeds
  • Dressing
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, crushed

Method

Cook the soba noodles according to the packet instructions, drain well.
At the same time cook the edamame in a pot of boiling water for a few minutes until bright green, drain well. 

For the dressing, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic. 

In a large bowl, toss the soba noodles with the dressing, then add the avocado, grated carrot, capsicum, edamame, and spring onions. Sprinkle with black sesame seeds and serve immediately.
