Korean Avocado Kimchi Toast

Ingredients
- 1 avocado
- 2 tsp lime juice
- 2 tsp canola oil
- 2 eggs
- 2 slices rustic bread e.g. sourdough or ciabatta
- ½ cup kimchi, chopped (or sauerkraut if you prefer)
- 2 spring onions, sliced
- 2 tsp sesame seeds, lightly toasted
- Gochujang mayo
- 2 tbsp mayonnaise
- 1 tsp gochujang (korean paste)
- 1 tsp lime juice
Method
For the gochujang mayo, mix the mayonnaise, gochujang, and lime juice in a small bowl until smooth. Taste and add a little more gochujang if you prefer.
Place the avocado and lime juice in a bowl and mash until smooth, season with a little salt.
Heat a film of oil in a pan and fry the eggs until the white is set.
At the same time toast the bread.
Spread the mashed avocado over the toast, top with kimchi a fried egg, then drizzle with gochujang mayo. Garnish with spring onions and sesame seeds before serving.
