Ingredients
- 8 eggs
- 2 tbsp butter
- 1 avocado, mashed
- 100g feta, crumbled
- 200g cherry tomatoes, halved
- 2 tbsp fresh parsley, chopped
Method
Whisk the eggs with a sprinkle of salt and black pepper.
Melt half of the butter in a saucepan over medium heat and drop the rest into the egg mixture then pour the eggs into the pan, stirring gently until almost set.
Remove the pan from the heat and gently mix through the mashed avocado and crumbled feta. Serve topped with cherry tomatoes and parsley.
