Ingredients

  • 1 packet King Hearty vegetable (low salt) soup
  • 500g beef mince
  • 2 cloves garlic, minced
  • 1 large onion, diced
  • 1 medium carrot, sliced
  • 100g mushrooms, sliced
  • 1 tin (400g) chopped tomatoes
  • 2 tbsp cooking oil
  • 2 ½ cups hot water
  • Salt
  • Black pepper

Method

An easy to cook, budget friendly beef mince recipe that can be served as it is or easily transformed into various family favourites. The goodness of lentils, grains, vegetables and flavour from the soup mix will help you create the perfect homy everyday meals.

Method

Heat oil in a large fry pan. Brown beef mince, breaking up with a spatula. Add garlic and onion and continue to cook for 2 minutes then add the carrot and mushroom and cook for 1 minute.

Transfer the content of the frying pan to the slow-cooker bowl. Add the soup mix, chopped tomatoes and hot water. Stir well. Cook on high for 1 hour, then turn to low for 2-3 hours. Check a few times and add a little hot water if the mixture is too dry. Season to taste.

Ingredients

2 cups Almighty family beef mince meal base
5 tbsp shop bought tomato salsa dip
100g corn chips
A handful diced capsicums, mixed colours
A handful grated cheddar cheese
2 tbsp Tatua sour cream
1 NZ avocado, mashed
Superb Herb coriander to garnish 

Method

Mix beef mince meal base and tomato salsa dip. Arrange corn chips on a heat-proof serving dish. Top with the beef mince mixture then scatter capsicums and cheese. Place under the grill for 5 minutes to melt the cheese. Serve with sourcream, mashed avocado and coriander.

Enchiladas

Ingredients

3 cups  Almighty family beef mince meal base
5 tbsp shop bought taco seasoning mix
1 cup shop bought tomato salsa dip
½ tin black beans, drained
6 tortillas
11/2 cup grated cheddar cheese
1 NZ avocado, sliced
Superb Herb coriander
Tatua sour cream

Method

Preheat the oven to 180°C. Mix the seasoning mix to the beef mince meal base. Place 1/2 cup of the filling on a tortilla, sprinkle with cheese then roll up. Make 6 rolls. Spread 1/2 cup of the salsa dip on the bottom of a baking dish. Arrange the enchiladas in the dish,the seam side down. Scatter black beans, rest of the salsa dip and the remaining cheese. Bake in the oven for 20-30 minutes. Serve topped with avocado slices, sour cream and coriander. 

Spaghetti Bolognese

Ingredients

350g Diamond spaghetti
2 cups Almighty family beef mince meal base
2 tbsp tomato paste
1 cup Tomato passata
Superb Herb parsley
Parmesan to serve

Method

Place beef mince base, tomato passata and tomato paste in a saucepan. Cook over medium high heat until thickened. Season to taste. Meanwhile, prepare spaghetti according to the packet instructions. Serve bolognese sauce over spaghetti, with grated parmesan and parsley. 


Cottage pie

Prep time: 5 min
Cook time: 45 min
Serves: 4 

Ingredients

4 cups Almighty family beef mince meal base

1 cup frozen peas

Topping:   
800g potatoes, boiled and mashed 

2 tbsp butter

3 tbsp Tatua cooking cream
Salt
pepper

1 cup grated cheddar cheese 

Serve with steamed greens- broccoli, beans etc.

Method

Make soft mashed potato with butter and cream. Mix the peas with beef mince meal base and place in a baking dish. Top with the mashed potato. Scatter cheese all over and bake in the 180°C oven for 40-45 min until the pie turns deliciously golden. Serve with steamed broccoli.
