Orange and Avocado Salad with Orange Mustard Dressing

Ingredients

  • Salad:
  • 4 handfuls of baby spinach
  • 1 avocado, sliced
  • 2 oranges, peeled and sliced
  • ½ red onion, sliced
  • Dressing:
  • 4 Tablespoons of good Olive Oil
  • Juice from one orange
  • 1 teaspoon of grainy mustard
  • 1 Tablespoon of runny honey
  • Cracked pepper

Method

Mix dressing ingredients in a jug

Place spinach on a serving platter or bowl and top with orange slices, avocado and red onion

Keep dressing and salad covered separately in the fridge until ready to serve

Drizzle dressing over the salad just prior to serving
