Avocado Matcha Tiramisu

Ingredients
- 1 tbsp matcha powder
- 1 cup hot water
- 2 tbsp sugar
- 1 tsp vanilla extract
- 300ml cream
- 1 avocado (just ripe)
- 250g mascarpone cheese
- ¼ cup icing sugar
- 1 tsp vanilla extract
- 200g sponge finger biscuits
- 50g white chocolate, grated
Method
In a bowl, whisk the matcha powder with hot water until smooth.
Stir in sugar and vanilla extract. Let it cool.
Whisk the cream in a bowl until soft peaks.
Place the avocado in a blender or food processor and blend until smooth.
Add the mascarpone, icing sugar, and vanilla and process again until well mixed.
Gently fold the avocado mixture into the whipped cream until fully combined.
Dip each sponge finger briefly into the cooled matcha mixture and layer them in a serving dish.
Spread half of the avocado mascarpone cream over the ladyfingers.
Repeat another layer of dipped ladyfingers and top with the remaining cream.
Cover and refrigerate for at least 4 hours (or overnight) for the best flavour.
Sprinkle with grated white chocolate to serve.
